Dacsa is the Valencian rice that Spanish cooks reach for when the dish has to hold up to broth and seasoning without turning to mush — short-to-medium grain, grown in the Valencia region, built for paella and the rice dishes that crossed the Atlantic into Cuban kitchens.

Three 2.2 lb bags. The grain absorbs liquid and flavor rather than releasing starch, which is why it works as well in arroz con pollo and arroz amarillo as it does in a proper paella valenciana.
