How to brew the perfect cafecito
Grind to fine espresso consistency. Fill a moka pot's bottom chamber with water to the valve. Pack the basket lightly with fresh-ground Cubita — don't tamp. Brew over medium heat. As the first drops emerge, beat them in a separate cup with 2–3 teaspoons of sugar until you get espumita (thick pale foam). Pour the rest of the brew over the foam. Serve in small cafecito cups.
