Annatto seed (achiote) is the small reddish seed used across Cuban, Caribbean, and Mexican kitchens to color and lightly season rice, stews, and roasted meats with an earthy, mild flavor.

Common Uses: steeped in warm oil to make achiote oil for arroz amarillo, simmered into the broth for arroz con pollo, rubbed into pernil and lechón asado marinades, added to sofrito for color, or ground into homemade sazón blends.
