Badia sumac is the dried, ground berry of the sumac bush — tart, citrusy, deep red, used across Middle Eastern cooking and increasingly on Latin grill stations for brightness without acid splash.

Common Uses: fattoush, za'atar blends, grilled chicken finish, pollo asado dry rub, dusted over hummus, sprinkled on camarones al ajillo for a citrus lift, rubbed on fish before the grill.
