Bijol — the Cuban kitchen's yellow rice color
Bijol is the orange-red powder Cuban cooks reach for when rice needs to be yellow — arroz con pollo, paella, arroz amarillo. Made from annatto (achiote) seeds, ground with cumin and salt. Adds beautiful golden color and mild earthy flavor. Different from saffron — much cheaper, less aromatic, but visually does the same job.

How to use
- Yellow rice: 1/4 teaspoon per cup of rice + standard cooking liquid.
- Arroz con pollo: add with sofrito at the start of cooking.

- Stews and beans: a pinch deepens color and adds earthy notes.
Bijol vs saffron — what's the difference?
Saffron is more aromatic and more expensive. Bijol is the workhorse color — Cuban cooks use it for everyday rice. Save saffron for special-occasion paellas; use Bijol for weeknight arroz con pollo.
Storage
Airtight, cool dry pantry. Color and aroma fade over time — replace if it goes pale.
