Valencia (or arroz bomba-style) is the short-grain Spanish rice for paella and creamy Cuban rice dishes — it absorbs broth without falling apart, gives that signature creamy-but-distinct-grain texture. Different from long-grain table rice. Essential for paella, arroz con pollo done right, and arroz con leche.

How to cook

  1. Paella: toast the rice in olive oil first, add hot broth ratio 2.5:1.
  2. Arroz con pollo: cook with sofrito, chicken broth, saffron — let the bottom crisp (socarrat).
  3. Arroz con leche: simmer with whole milk, cinnamon, lemon peel until creamy.

Why Valencia rice for paella?

Long-grain rice stays separate and dry — wrong for paella. Valencia absorbs 3× its volume in broth and stays slightly al dente, which is the texture paella needs.
