How to cook
- Paella: toast the rice in olive oil first, add hot broth ratio 2.5:1.
- Arroz con pollo: cook with sofrito, chicken broth, saffron — let the bottom crisp (socarrat).
- Arroz con leche: simmer with whole milk, cinnamon, lemon peel until creamy.
