Gofio canario from El Molino de Elba is toasted, finely milled grain flour — traditionally a blend of wheat and corn — used as a base ingredient across Canary Island and Cuban kitchens.

Common Uses: Stirred into warm milk or café con leche for breakfast, kneaded with water and honey into pellas de gofio, folded into mousse and ice cream bases, thickening sancocho and escaldón, or dusted over bananas and fresh fruit.

Pantry Role: staple base, thickener, baking staple.

Common In: Canary Island home cooking, older Cuban households with isleño roots, and Latin American kitchens where gofio carried over with Canarian immigration to Cuba.
