Mojos, Marinades & Rubs
Mojo is what a Cuban kitchen marinates in, and La Lechonera sets the standard: 23 oz for a weeknight, a full gallon for a lechón. Sour orange comes by the gallon too.
Goya runs mojo in 12 oz and gallon, plus recaíto cooking base at 6 and 12 oz. Badia brings sour orange in the 20 oz bottle, mojo marinade in 10 oz, and an all-purpose marinade cut with Complete Seasoning.
Iberia's mojo for yuca and tostones is the one for side dishes. Conchita guava barbecue sauce is the outlier worth a try.
